Ingredients:

For the Strawberry Jelly:

  • 1 cup fresh or frozen strawberries, hulled
  • 1/3 cup granulated sugar
  • 1/2 cup water
  • 1 teaspoon unflavored gelatin
  • 2 tablespoons cold water

For the panna cotta Garnish:

  • 6-8 fresh strawberries, halved or sliced
  • Fresh mint leaves (optional)

Instructions:

Prepare the Panna Cotta Base:

  • In a small bowl, dissolve the gelatin by sprinkling it over 3 tablespoons of cold water. Let it bloom for 5 minutes.
  • In a saucepan, mix the cream, milk, and sugar. Warm over medium heat, stirring occasionally, until the sugar has fully dissolved and the mixture is hot, but not boiling.
  • Take it out from heat and stir in the bloomed gelatin until fully dissolved.
  • Add the vanilla extract and mix well.
  • Pour the panna cotta mixture into small jars (approximately 6 jars, 4 oz/120 ml each). Refrigerate for 2-3 hours, or until set.

Make the Strawberry Jelly:

  • In a small saucepan, combine strawberries, sugar, and water. Heat over medium heat until the strawberries soften and release their juices (about 5 minutes).
  • Blend the mixture until smooth, then strain through a fine mesh sieve to remove seeds.
  • In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water and wait  5 minutes.
  • Stir the bloomed gelatin into the warm strawberry puree until dissolved. Allow the mixture to cool slightly.
  • Gently pour a thin layer of the strawberry jelly over the set panna cotta in the jars. Refrigerate for an additional 1-2 hours, or until the jelly is set.

Garnish and Serve panna cotta:

  • Top each jar with fresh strawberry slices or halves and garnish with a mint leaf if desired.
  • Serve chilled and enjoy!
