  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 10 oz (300g) mushrooms (such as cremini, button, or porcini), sliced
  • 1/4 cup (60ml) dry white wine (optional)
  • 1/2 cup (120ml) heavy cream
  • 1/4 cup grated Parmesan cheese (plus more for serving)
  • 6-8 fresh sage leaves
  • Salt and pepper to taste
  • Optional: Fresh parsley for garnish

Instructions:

Cook the Pasta:

  • First bring a large pot of salted water to a boil. Then add the tagliatelle and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining tagliatelle.

Prepare the Mushroom Sauce:

  • Before moving on heat the olive oil and butter in a large skillet over medium heat.
  • Add the garlic and onion, cooking until fragrant and softened, about 2-3 minutes.
